Just looking back on the @GBCuredMeat festival and I think the most nerve-wracking point was making sure that @chefcalum got his cold pastry. At precisely 9 minutes and 45 seconds into his demo. No more, no less.

Huge congratulations to @FoodsTempus for winning the @GBCuredMeat Award yesterday. It was great fun judging it - and Tempus were worthy winners. Their guanciale is spectacular.
