For those wondering, here is the glycaemic index for some of our carbohydrates staples. Kokonte: 7-18 Ga kenkey: 41 Fufu: 55 Tuo Zaafi: 68 Akple: 69 Banku: 73 Omo tuo is likely to have a high glycaemic index because a plate of rice is around 70-80.
