@CaryKelly11 Thanks for doing this…I believe it because the initial numbers are similar to what I get. Anyone can explain sushi? The rice is cooled but still gives bad glucose spike? Maybe its the reheating as well. In addition have to say not all pasta is same. Fresh pasta is lower impact.

I thought resistant starch was bs so I did some experiments:
Fresh rice → 150 mg/dL
Next-day rice → 120 mg/dL
Fresh pasta → 164 mg/dL
Next-day pasta → 135 mg/dL
Fresh potatoes → 122 mg/dl
Next-day potatoes → 110 mg/dl
