@chiweethedog Yep, same thing I do to get crispy chicharrones, the water renders the fat and evaporates leaving the fat to fry in its own oil and renders the best liquid gold pork fat for tamales.

I love bone marrow on toast but I usually oven roast them. Smoking them must add a whole nother dimension. I'm going to make this and serve it up on brisket tacos with pickled onions.
