I don't have an issue with tipping on its own, but one of the big problems with the practice in America is the lie that it is the job of the customer and not the employer to ensure the staff get paid fairly. This still pushes that lie. If buffets can charge a flat food and drink fee to have you eat and drink as much as you want within a reasonable limit, why can't restaurants charge a flat service fee to get as much service as needed with the same caveat? Why must it scale with orders? Doing that implies the servers are on a commission basis, which doesn't make sense when you compare the job to other similar ones in the same industry. It's especially weird whenever a restaurant doesn't share those tips with the kitchen staff, whose workload also increases based off of orders. That being said, I still prefer this over the pressure of traditional tipping in America. If I'm being told up front the expected cost, even a scaled one, it feels less like a scam. However, saying it's not a tip when it effectively has the exact same function as a tip is eyebrow raising.
