Happy @MeatlessMonday!You know how much we love a whole meal in one dinner, especially when it’s a salad! Here the Chopped Salad With Jalapeño-Ranch Dressing from NYT Cooking. We added tofu with Mexican seasoning to make it a complete meal. This salad from Alexa Weibel a winner!

@PollanFamily @MeatlessMonday We had a bowl of bulgur with kohlrabi, cucumber, avocado, pumpkin/sunflower/sesame seeds and miso dressing. It’s a variation of a recipe from Vegan Easy by Frances Boswell. Plus vegan cordon bleu which was very close to the animal based original.

Happy ⁦@MeatlessMonday⁩ everyone! Tonight it’s Black Bean and Corn Tacos with a dollop of guacamole on top. We sauté lots of minced red onion with cumin, chili powder and garlic, add beans and frozen corn. Place cheese and bean mixture on tortilla and broil! That’s it!
