Wine chaptalization, named after Jean-Antoine Chaptal, involves the addition of sugar to grape must (juice) before or during alcoholic fermentation. This technique is usually employed when grapes do not naturally produce enough sugar for a balanced wine. In regions with adverse climatic conditions, like extreme cold or high rainfall, sugar levels in grapes can be low, resulting in lower alcohol levels in wine. Since many regions have legal requirements for a minimum alcohol content, chaptalization is utilized to correct sugar levels, not for sweetness, but for balancing alcohol, tannin, and taste. The main goal of chaptalization is to boost the alcohol content of wines by taking advantage of the fermentation process where yeasts convert sugar into alcohol. Consequently, low sugar content results in less alcohol, affecting the structure of the drink. This process is extensively used in red wines to achieve a more balanced taste. The use of chaptalization is debated among winemakers, with critics suggesting it is a strategy to compensate for low-quality grapes. However, in scenarios where weather conditions adversely affect crop quality, interventions like chaptalization are needed to maintain the quality of the end product. While chaptalization can cause disagreements within the industry, it's agreed that certain techniques may be necessary during wine production to maintain the quality of the end product. Happy #Lambruscoday! 🍇🍷 Lambrusco wines are one of the oldest existing types in the world. There is historical evidence that the Etruscan civilization, which lived in the region of Emilia-Romagna, Italy, during the first millennium before Christ, produced drinks from the grape of the same name. Centuries later, the Romans came to elaborate frizzante versions of Lambrusco wines, through a second fermentation that took place inside the amphorae. It was in the 18th century, with the implementation of the Borgognona type bottles, that it was possible to store Lambrusco wines without them losing their residual perlage, preserving one of their main characteristics. Lambrusco is constantly remembered as one of the "starter wines" for those who are not used to drinking it. This is because it has a slightly sweet taste (even in its dry variations), with plenty of acidity and not very evident tannins. Unlike sparkling wines, the perlage of Lambrusco is fine and not very persistent. The sensation is less intense and creamy, providing a light freshness to the palate. It is usually a very aromatic wine, with notes of flowers and red fruits such as cherry, raspberry and strawberry. Finally, it is impossible to talk about what Lambrusco is without mentioning its characteristic bubbles. They can originate as a residue of the first fermentation, or through the Charmat method, in stainless steel casks.
