I think both make nice shoes. Jay Butler mostly uses a Blake stitch construction, which means stitching goes straight from the sole into the insole. Grant Stone uses a Goodyear welted construction, where the sole is attached using a welt and strip of canvas known as gemming. Blake stitching results in a lighter feeling shoe, but you will also feel the stitches in the insole if you forgo socks. Goodyear welting results in a heavier, sturdier shoe that will be marginally more water resistant, which may be preferable on fall/winter styles such as boots. Neither is objectively better or worse than the other, as they both can be resoled, but they feel different. What you prefer will be a matter of taste.
