15yr old Shorthorn,grass fed, not 10 miles from where I bought it and where it is now cooking. We are 5hrs in at 140 for this slow roast. Sustainable meat as it should be. Thanks Rob @RoastMutton2 @landscapecareer

@RoastMutton2 So glad to see you tasting the meat raw. I was taught this as a 10 yo by an enlightened butcher friend. I still eat much of my meat raw. I’m sure that it’s healthier with fewer nutrients ‘cooked’ out. All the best for your new venture
