Honestly it's a core part of the series. Every elements style has strengths and weaknesses, it's part of why the combination of all 4 makes the Avatar so powerful. It's not just having all the elements, it's having a balanced understanding of all their strengths.

ATLA makes it very clear that different bending styles have different techniques. Iroh even talks about how water bending usually uses more re-direction, turning an enemies strength against them. So yeah, this more direct block is more in line with how earth benders fight.
