Because Artemis II isn't trying to race there. Apollo 11 took 3 days on a direct trajectory with one goal: land and come back. Artemis II spent 5 days testing life support, navigation, propulsion, and deep space systems on a flyby. It's a test flight, not a sprint. Different mission. Different purpose. Same destination.
