Emulsifiers in processed foods have been poisoning people for decades. It's now so bad that even the WSJ is writing about it. Emulsifiers increase the risk of heart disease, Type 2 diabetes, and some cancers. They change the gut microbiome in ways that cause inflammation. Carboxymethylcellulose reduces bacterial diversity and increases "bad" bacteria. Bacteria bred on these additives invade the inner mucus layer of the gut, leading to inflammation throughout the body and increasing the risk of IBD. Scientists are investigating low-emulsifier diets as a potential treatment for Crohn's disease. "... carrageenan impairs glucose tolerance, increases insulin resistance and inhibits insulin signalling in vivo in mouse liver and human HepG2 cells. These effects may result from carrageenan-induced inflammation. The results demonstrate extra-colonic manifestations of ingested carrageenan and suggest that carrageenan in the human diet may contribute to the development of diabetes."
