The other characters aren't more interesting, or its very subjective
Jax is the focus since he's the only antagonist to the show's message, everyone else is on the "same side" and have less crazy backstories (except maybe Ragatha)
It applies to Caine aswell being the 2nd focus

Jax’s writing on paper is fine ig its just that the show is SO on the nose about how badly they want you to be invested in his backstory more than the other characters who are more interesting. He gets a whole movie for his trauma while the rest get the short end of the stick.
