I've always loved this day, it reminds me I'm Canadian even though I live in the States. But right now, "Happy Canada Day" doesn't feel right, and I don't know when it will. I am proud of my brave, good Canadian family and friends. But I'm horrified by our country's history. 🧡

Lately, I only have access to a mini fridge, old (old!) microwave, and a 3qt Instant Pot for cooking. Tonight I made (some version of) cochinita pibil, with help from a great conversation with my dad at @RedIguanaOG, some experiments in college, and new tips from @kenjilopezalt.
