Charoset, a traditional Passover Seder paste of fruit, nuts, spices, and wine, originates from ancient Jewish traditions meant to symbolize the mortar used by Israelite slaves in Egypt. Mentioned in the Mishnah Pesachim 10:3, it represents both the bitterness of slavery and the sweetness of freedom, with regional variations evolving over centuries.
Symbolism of Slavery: Derived from the Hebrew word cheres ("clay"), charoset acts as a visual and textural reminder of the mortar and brick-making forced upon the Israelites.
Talmudic Debate: The Talmud presents two main views: one (Rabbi Yohanan) links it to the mortar, while another (Rabbi Levi) suggests it recalls the apple orchards where Israelites hid from Egyptian oppression.
The recipe has adapted to local ingredients throughout the diaspora:
Ashkenazi (Eastern Europe): Typically combines apples, walnuts, cinnamon, and red wine, creating a coarser texture.
Sephardic (Spain/Portugal/North Africa): Often features dates, figs, raisins, and sesame, sometimes cooked down into a paste (or haleq).
Middle Eastern: Iraqi Jews, for instance, traditionally use only date syrup and chopped almonds.
The oldest recorded recipe, noted by the 10th-century philosopher Saadia Gaon, is a mixture of dates, walnuts, sesame, and vinegar.
