The stars are there—just way too faint compared to the sunlit Moon and spacecraft. These cameras use short exposures (and auto-adjust for the bright stuff) to avoid blowing out the highlights, so dim background stars don't show up. It's the same reason you don't see them in bright daylight shots from Earth. If they cranked up the exposure for stars, the Moon would be pure white glare.
