アメリカ人の兄貴に質問。 肉を焼いてる時、特に最後の１時間は肉の匂いでとてもお腹がすくんだけど、何か食べながら作ってる？ それともご馳走を一番美味しく食べるために他の食事を耐えてる？

@carrol_genie_ If you do wrap your ribs at the 2.5 hour mark make sure you go back in meat side down. I add butter and seasoning in my wrap.

前回ウッドチップは炭の中に入れてはいけないと教わったので水に浸けてからアルミホイルに入れて、炭の上に来るように網に乗せました。

@carrol_genie_ The deckel of point needs trimmed and then you get any loose pieces off around the edges. Keep a consistent 6mm layer across top. You're on the right path.

@dark_kochang Also brisket needs a very pepper forward seasoning to get the black bark. Wrap after you are happy with bark. I also use mustard as my season binder.

@dark_kochang Brisket I always wrap in butcher paper and pork ribs I wrap in aluminum foil. Also spritz with apple juice or cider vinegar every so often to help from drying out.

ちなみにこれを使って温度をモニタリングしたことでアメリカンBBQの原理を理解した。 肉塊を焼いてると中心温度が65度過ぎてから先が、水分の蒸発と釣り合ってなかなか上がらなくなるのだ。 つまりそのまま焼き続けるとカピカピになる。 （続く）
