The AI model training is under Settings > Channel > Advanced and it's near the bottom of that page!
The turning off Remixing UNFORTUNATELY has to be done every single time you upload, which is located near the bottom of the first page of upload settings you see when uploading! ❤️

This is me telling anyone who creates content on YouTube to go immediately and turn off the new AI functions that allow YouTube to train your videos and turn off video remixing on each upload. They are now pushing a Remix function that works off of this.
