Prep & Sear:
Preheat oven to 175°C. Sauté bacon in a Dutch oven until crisp. Remove.
Brown beef in bacon fat, then set aside.
Build Flavour:
Sauté carrot, onion, and 4 minced garlic cloves. Return beef and bacon, season, sprinkle with flour, and toss. Add the brandy to delaze.
Simmer:
Add pearl onions (optional), wine, stock, tomato paste, thyme, parsley, and bay leaves. Simmer, cover, and bake for 2-3 hours.
Finish:
Sauté mushrooms in butter with remaining garlic and extra thyme. Strain sauce from the stew, skim fat, and reduce until thickened. Return sauce to beef and add mushrooms.
Serve:
Garnish with parsley and serve over mashed potatoes or crusty bread.
