@SebLester I think the easiest way to go about this is to use the Scissors tool to break paths at key points before outlining strokes.

Question for Illustrator experts: Is there an easy way to expand strokes in instances like this in complex line art, but not have all the lines merge into one vector artwork? I would like to not 'remove overlap' and keep lines separate, so I can easily adjust them individually

@blancpain There are obviously infinite options and depends on region, usage etc, but some good ones to look for are Harissa, Pilpelchuma, Shatta, and of course schug/zhuk. Hard to find good ones in NY; Kalustyan’s is ok, but otherwise don’t bother buying one if you can read the label.
