Usually want to do this with harder vegetables. Like Broccoli or Broccolini. -prepare bowl of ice water. This’ll stop the vegetable from cooking further when done -Set a pot/pan to blil and add a BUNCH of salt. Dont worry you wont in-jest all of it, its just for the vegetables to absorb some flavor. -place veg in water once water boiling. You’ll notice the broccoli will become bright green. Only leave it in for a minute if you plan on sautéing but if you’re adding it right into a salad or something then you can let it sit for 3 minutes and get more tender. -When time is up, take it out of the pot and transfer to the bowl of Ice water. This’ll shock it and prevent it from continuing to cook -Done! You can now sauté the vegetables or do whatever else you wish Doing this assures vegetables are fully cooked and makes them taste so much better
