Soup is great and this isn't a criticism, but as someone with legit executive dysfunction anything that requires more than 3 ingredients or ingredients that can't last a week in the fridge, or meals that require me to chop a bunch of stuff up is a no go. I'm not a mirepoix girlie. Sorry! I also don't want to clean dishes, so sheet pan meals are king. Salmon + salt+ 10 min under the broiler = dinner in 15 min if I open a bag salad while the salmon's cooking. Sweet potatoes can sit on my counter and last forever. Broccoli lasts a really long time. Cabbage-based salads last longer than spinach/romaine/arugula etc. Rice on the shelf. Adobo in the shaker. Onion on the counter. I have this down to a science!

another option is to cook a large pot of soup and a pot of beans which will last an entire week. soup can be a meal in a single bowl, and beans add protein/fiber.
