I had a hankering for something umami forward and light, so II made a ground pork and vermicelli Vietnamese salad with lots of herbs and veg. As it is #Purim, time to make a batch of hamantaschen, these filled with apricot and perfumed with cinnamon. #chemistswhocook

This meal comes together easily with some prep work in the morning. Marinated souvlaki and made tzatziki, and made marinade for lemony potatoes. Then just popped potatoes in oven, grilled zucchini and chicken skewers and make a salad. Delicious Greek meal #chemistswhocook.

I love salmon rice bowls. This one had a bang bang marinade. Served with quick pickled cucumber, steamed edamame beans with sea salt, broccoli, carrots scented with cumin and sesame oil. Had some kimchi too and finished off w/ gochujang mayo. #chemistswhocook.

Eggplant Parmesan is one of those comforting foods. This one I salted, floured and fried the eggplant. Layered it with a zesty tomato sauce, mozzarella, Parmesan, basil and a held it together with an egg and Parmesan mix. Baked for 30 min. #chemistswhocook.

Portuguese chicken. So juicy. A marinade of garlic, paprika and smoked paprika, oregano, garlic, olive oil and vinegar. Roasted over cabbage, red peppers and potatoes. Chicken was spatchcocked. #chemistswhocook.

Addictive dinners includes kofta kebab. These are beef and broiled. I broiled also some cherry tomatoes and those went into the wrap along with a garlicky smoked paprika mayo, shredded lettuce, pickled onions w/ sumac and parsley, chopped cucumber w/ dried mint. #chemistswhocook.

It looks ugly but tastes great. It is somewhere between a taco and an onigiri. Miso salmon that was broiled, combined with spring onion, furikake and some kewpie mayo and then surrounded by seasoned sushi rice and held in nori. #chemistswhocook.
