Our meat names mean something specific like Otoro, Chutoro, etc. So when y’all say Shoulder Loin Steak we laugh the same way you would laugh at us for saying Tuna Fillet or Tuna Belly Loin. If you know the anatomical name, you can easily figure out the common name that we use. Some of you even knew Denver Steak is called Zabuton. What most of yall seemingly didn’t know is the your shoulder loin has a Zabuton in it.
