This is a chuck steak!!! I will tell you all the secrets.
1) this is 3 cuts of beef in one
2) separate the long skinny muscle at the top (Denver Steak). It is one of the best kept butcher secrets in America (or was).
3) the remaining steak is the chuck eye + Sierra, my personal favorite. It is the brother of the ribeye it just comes from the first 3 ribs instead of the remaining ribs. Take that middle muscle out (Sierra) because it’s tough and pan sear the chuck eye.
