
This is the most amazing chuck that I have ever cooked and eaten. It was more tender than I ever imagined a chuck could be. I think two things did it. 1. I haven’t been to @CritchfieldsKy since before I was injured. It has been wet aging at least five weeks and likely six. 2. I tied it up after seasoning which I think helped the amazing color. Now the trick is going to be aging all of them that long.
