Condensation. Weather cloud.. then rain..
The hot food makes steamy air, that vapor we see when a food is hot.. so since the pot is closed the air floats n touches the lid abi na cover of the pot, getting trap there, once the steam cools it becomes water drops.
If the food is cold, there are still steam hiding.. heat occurs and the same process happens .
