I think it’s because the focus is that it happened on a friday and he resurrected on a Sunday. The scripture says it was on the day of preparation (the day before the sabbath) which in Jewish tradition was friday. Him being crucified on that day carries significance since he is Lord of the sabbath. His death also happened during passover to signify Christ being the ultimate sacrifice (the Lamb slain). So the date for Easter Sunday and is always aligned with passover because of that link. It is chosen as the first Sunday after the first full moon after spring equinox (21 March).
