@Iwatekko6969 Beef is only the primary protein for BBQ in Texas. BBQ is, at its most primal, pork cooked low and slow over direct heat. In Eastern North Carolina, it is whole hog. Western North Carolina, also called Lexington-style, uses the faster-cooking pork shoulder.

@DanHubert_1776 @Iwatekko6969 Pork ribs and pork butt are always on the menu here. Pork butt just doesnt seem good when brisket, pork ribs and beef ribs are on the menu. You need sauce for it and that just doesn't compare with the meats that dont need sauce.

@Iwatekko6969 Americans enjoy both beef and pork BBQ, but it’s influenced by region. It seems to me that Texans think of BBQ as beef. Folks in Kansas City and east to the Atlantic coast tend to favor pork. It’s got a lot to do with our ancestors and the meat they were raising.

Even in a vacuum seal, meat undergoes slow enzymatic breakdown and lipid oxidation over the years. The freezing process only slows down degradation; it doesn't grant eternal life. The fats in this steak have chemically spoiled, and eating rancid meat will be a terrible experience. It is not worth it.
