I asked for real traditional Japanese recipes, the kind your grandparents actually made, passed down through generations. @sanpolan replied with a page from his grandma’s 1980s regional cookbook: authentic salmon dishes from an area where samurai once managed the fishing. Then he dropped “iizushi”, a fermented rice and fish dish that predates modern sushi by centuries. Serious old-school preservation technique.
