Hello my Japanese Family. I absolutely love interacting with you because you are all so positive. People here want to be negative and put you down. I had someone not Japanese comment how the crust was too thick and it looked like birthday cake. I do a 70% hydration, 48-72 hour cold fermentation. The crust is the star of the show. I cook at 750°-800° to get a char. Look at the air pockets in the dough. Everyone can have their opinion. I wish people didn’t just try to be negative to bring you down. The crust puffs because of the technique. If you don’t like this style that is fine. I just enjoy the positivity of the Japanese community. Thank you all for the love and support. Oh and here’s more goat cheese haha. Sausage and Peppers with goat cheese pizza.

I went outside my comfort zone today and smoked brisket for the very first time… It was my dad’s specialty and none of us have had the heart to do it since he’s been gone.💔 I doubt @TerryBlacks_BBQ will be calling anytime soon, but I think it turned out pretty good.☺️ Everyone was happy.🫶🏼♥️
