Finally got to visit Greedy Cow bakes after about 3 years of following them on sm. Highly recommend it- so good we went back to get more. Popped into @simply_smashed to try the Peruvian burger- SO GOOD! Felt like a very clean burger. And finished the day with naanstap karak chai

There's this lunch from my Goldman days I can't get out of my head. After 16 failed attempts, I finally nailed the green sauce that had senior bankers queuing in Savile Row suits. Here's why I spent 2 months obsessing over chicken: There was this Peruvian place near our Goldman office. Mental queues outside every single day. Senior bankers, MDs, people who expense £300 dinners without blinking... all standing in line for chicken. I had to see what the fuss was about. That green sauce hit me like a truck. So addictive I understood why grown men in Savile Row suits would abandon their desks for this. The chicken? Fell apart with a fork. Juice running down my wrist. I threw away my Tesco meal deal routine that same day. Fast forward 5 years. We're London's highest-rated burger joint. But I'm never satisfied. There's this insecurity that drives me mental with every product we launch. So when I couldn't shake that taste memory, I knew I had to recreate it. Version 1? Complete disaster. Burnt chicken, perfect sauce, everything else wrong. By Version 16, I was losing my mind. Two months of testing marinades. Custom potato buns because our brioche was overpowering the flavors. Week after week we got closer and closer. How do we retain moisture and make this the juiciest burger? How do we make the green sauce pack a flavour punch to complement the tender chicken? Same obsessive testing that got us here. When our first customer tried it yesterday, he just stared at me wide-eyed: "This is the best burger on your menu. How did you even make this?" That feeling? When something living in your head becomes real and makes someone else happy? That's why I do this. The Peruvian Thigh launches today iA Some obsessions are worth chasing. The best ones change everything when you finally catch them.
