The word salary comes from salt. Roman soldiers were paid in salt (salarium) and marched on salsamentum, salted preserved meat that lasted weeks. We dry ours with Bitcoin miner heat in Finland. Same principle. Different century.

Our @BTCButcherCG has run @Kotitila_fi since 2012, sources Finnish grass-fed beef from small domestic slaughterhouses, and makes the same product he would want to eat himself, which is why it ends up with two ingredients and nothing on the label that needs explaining.

Why does every "keto snack" need 14 ingredients? Beef doesn't need rescuing. It doesn't need flavoring, tenderizing, or preserving. It needs heat and salt. That's the whole job. Everything else on the label is there to cover for the source material.

Ancel Keys built the case against saturated fat from 7 countries. He had data from 22. The 15 he excluded had high-fat diets and low heart disease rates. They didn't fit, so they didn't count. That dataset became the citation behind decades of dietary guidelines. We're still living in the aftermath. Low-fat everything. Seed oils. A food pyramid built on omissions and lies.

Every shortcut was available: preservatives, commercial dryers, sugar for the mass market. Every one was turned down. Not because it couldn't be done. Because doing it meant adding something at the cost of quality, and that's where the line is.

Sugar is in most commercial jerky to extend shelf life and hit the sweet taste palate that mainstream consumers expect, and if you have been eating jerky your whole life thinking it was a savory product, check the label because it is closer to candy than it looks.

The same mindset that leads people to sound money leads them to simpler food. Not a coincidence.
