I get that we shouldn’t be pharisaical regarding the law, and that Jesus came to save us from sin - but The Law isn’t sin right?

God sent Jesus to save us from sin. So it’s no longer our works but acceptance of Jesus Christ that bring salvation

Does it not matter that they were said and written in stone and that Jesus came and said that he hasn’t come to change the law (Matt 5:17)… Did he say somewhere that we only keep the laws he repeated in the NT?
