お客様に安全に食を提供するためです。
修行が1番厳しいのは伝統的な日本料理です。
日本人は料理に人生を捧げます。
我々にとって食は哲学であり神聖な活動です。自然に感謝を示す行いです。
日本文化の真髄です。食は私達日本人の精神の拠り所であり、文化の中心です。
そして日本料理は日本の風土や神道と深いつながりがあります。
日本食をお食べになる場合は、できる限り、衛生管理がきちんとしており、適切なトレーニングを受けた方の料理する店でお楽しみください。
これは食中毒を防ぐために重要です。特に刺身や寿司は寄生虫やバクテリアが怖いです。
