@ChefGruel I had the @CalicoFishHouse fries with my lobster roll on Saturday night. I usually skip fries...what a difference beef tallow makes.

On fry structure, McDonald's takes the prize. However, notice none of these are cooked in quality oil. McDonald's used to cook in tallow and they were amazing. I am speaking from the perspective of flavor, all of these industrial oils taste bitter and stale. I would love to taste any of these fries in a better oil. I am now experimenting with @ZeroAcreFarms which has an incredibly clean flavor - made from fermented sugarcane, low in linoleic acid.
