@blockhead4000 For lean proteins like filet, resting ensures a proper cook as carry over heat could feasibly bring it from the tail end of rare (128f) to bordering on medium (135f). For fattier cuts like ribeye or, it becomes a matter of retaining rendered intramuscular fat.
