@ArtifactBret You’re correct since most of the micro flora is from the barrel, Foeder etc and not necessarily from the coolship. Lots of breweries for millennia used coolship as to cool beer that didn’t end up sour or wild.

@EmbraceTheFunk Big inspiration for me. Saint Somewhere is a basically a Frankenbrew setup.

Anyone remember these from about 25 years ago? Frankenbrew DVD showed how to make a cheap brewery using used dairy equipment. I always wondered if these setups were in part responsible for some of the terrible quality 90s/early 2000 brewpub beers.
