I have said it 1000 times. The best steakhouses in America do high heat broiler, hot & fast. No quintessential, acclaimed steakhouse is doing reverse sear or sous vide. Prime or even CA beef doesn’t need a cute process. Fire = Maillard reaction. It’s that simple.

American grilling culture is so reddit-tier reverse sear, pre season, let it rest, garnish meanwhile the greatest steak chef alive, Victor at Extebarri, tosses his steak on hot charcoal, seasons with only salt while it's on the grill, flips it once and it's done in 6 minutes

@BeastManSteve Someone has their priorities outta line. I could go on a long rant about being responsible, but anything on that topic gains deaf ears. And no one tell me about being old fashioned. Old fashioned didn't have these problems in anywhere near the same frequency as they do today.

Add in tech is allowing businesses to build customer profiles/notes. To my knowledge they aren’t being shared outside of in-house but it’s a matter of time before someone like Open Table allows company to company customer profile sharing. Your reputation will proceed you…

This should be the #1 priority in this country that’ll cure more issues than can be listed. And there isn’t a close 2nd. The economy, public safety, increased standards of living, schools, you name it, EVERYTHING is by far, better.
