There is a small ritual in a British kitchen, performed almost weekly between approximately 1850 and 1970, that has now disappeared so completely that most British adults under forty have never seen it done. Your grandmother bought a marrow bone from the butcher. He cut it for her with a band saw, into three-inch sections, and wrapped it in newspaper. She paid him sixpence. She walked it home in the basket with the rest of the shopping. She seasoned the cut surfaces with salt and pepper. She stood the bones upright in a small roasting tin. She put them in the oven at gas mark 5 for twenty-five minutes. The marrow inside the bone, white and silky and packed with fat-soluble vitamins, melted to the consistency of butter that has been left out in the sun. She served them on a plate with toast cut into fingers, a sprig of parsley, a lemon wedge, and a small mound of flaky sea salt. You scooped the marrow out with the handle of a teaspoon. You spread it on the toast. You ate it standing up at the kitchen counter because there was no time to sit down. Bone marrow is approximately 50% monounsaturated fat, contains the entire suite of fat-soluble vitamins, alkylglycerols essential for immune function, and the highest concentration of conjugated linoleic acid available from any tissue on a ruminant. A serving of marrow on toast delivered, for the price of the bone, a complete dose of nutrients that your blood, your brain, and your immune system were going to need. It cost, in 1962, sixpence per bone. The butcher often gave them away. By 2006 marrow had become a London restaurant dish. St John in Smithfield charged eight pounds for a single bone. Heston's version was twelve. It was suddenly, briefly, fashionable. People reviewed it with a faint air of discovery, as though they had stumbled on something exotic. Their great-grandmothers had eaten it standing up at the kitchen counter for 40p a week. Your butcher still cuts marrow bones. He often gives them away when you buy a proper joint. They are still sixpence in real terms. The teaspoon is in the drawer. The kitchen counter is, presumably, still where you left it.

For the last few years I’ve been ordering my now 18 year old daughter not to speak or interact with certain people and I mean not even returning a hello, not a single word.
