People ask us why we are enthusiastic about AI and other new technologies when we print our newspaper on real paper and shy away from social media and the internet. The answer is simple: Used correctly, AI and being human are two sides of the same coin. AI frees knowledge from increasingly corrupt big institutions and guilds and puts it back our hands, which gives us more leverage over our time and our product. AI is a value-add, while social media is a time-suck — labor that we are required to do for free according to someone else’s rules in order to maintain a connection to a part of our audience. @countyhwy will never use AI to write or illustrate any part of our newspaper, because reading AI-generated content makes you dumber and less human. Thats the way it’s built. Using it that way shows contempt for what makes us human. Its like listening to music with no structure and half the notes missing. Reading the printed word makes you smarter and more human. Using AI to do drudgework gives you and your business more time to excel at your core proficiencies - which in our case means reporting, writing and editing. Learning how to use to AI to run our backend makes time for our young editors to write and edit — which is the core part of their jobs, and helps us put out a better newspaper, printed on real paper, with real ink.

This BOGO sale makes freshly cut London broil costs exactly half the price of this 85% lean prepacked stuff that probably originated in Brazil. The London Broil is also certified Angus and that means it must pass 10 strict specifications, including must have been harvested from an animal less than 30 months old, had fair to decent marbling and no deep bruising. You can also do this with chuck roasts, bottom round or sirloin. Just remember this for fat ratios: Chuck = 80% lean Top or bottom round (aka London) = 85% Sirloin = 90% If you don't have a grinding attachment for your food processor, simply cut your roast up into nickel sized pieces and grind them in your food processor in small amounts. It totally works! I've even done this with deboned short ribs.

Always get a second opinion before sinus surgery! I see so many patients who haven’t been fully evaluated and are rushed to surgery, only to find a few months later that the surgery didn’t help. Surgery doesn’t fix inflammation!
