That actually makes a lot of sense the way you explained it. I had no idea that’s how it worked, I always figured stuff like that was done in some big factory somewhere, not something you could just do yourself. Turning it into bricks and then blending it into powder is pretty clever. Now I’m curious, how long does that powder actually last once you’ve got it stored, and does it come back pretty close to normal when you rehydrate it?

@jbcourt Freeze dried stuff lasts the longest if stored with oxygen absorbers in Mylar bags. Like 20+ years depending. I’m just storing ingredients for use so I vacuum seal the jar it’s stored in and it will last until I’ve used it up over the next months/ year, whatever.
