@AccidentalLight Really good. I can probably up the chillies, and I’m still tempted to go with some chopped lettuce. Or maybe I should try cabbage a la the kimchi approach. I thought the dish needed a green crunch. The sauce obviates the need for tomato. Still pondering on onion, coriander, etc

Possibly heretical? I’ll take the risk. Toasted bacon sarnie, with a twist on the “brown sauce”. This is a lightly spiced tamarind sauce with a dash of birdseye. Usually served with samosas. (I prefer tamarind-y tastes to vinegary ones) ⁦⁦@AccidentalLight⁩
