@LadyDonnaLands @RickyDoggin True and yes I agree, hot plates for hot food. Cold plates for cold food. Easy to do lol stack plates under heat lamps & leave others refrigerated or at room temperature

@Adamqwax @RickyDoggin Not all have lamps. I never get steaming food in a restaurant. Placing steaming food on a cold plate goes from food conduction to escaping steam convection, thus cooling the food down even faster. Restaurants should keep their plates hot, not cold.
