"Why didn't China conquer the world?"
Because they didn't need to. Most Asian civilizations, such as China, Persia, India, or Arabia, were already largely self-sufficient, and their territories could already feed the largest populations in the world at the time. So, no need to navegate the Oceans in search of something they already had.
Europeans, on the other hand, heavily dependent on trade with Asia, ventured out to sea in search of new trade routes, since the Ottomans had blocked trade with the East after the conquest of Constantinople and increased the price of goods in Europe.
This consequently led to the strengthening of European naval and diplomatic power in the world's seas, leading to the colonialism we know today.
