@JSchuzer @Grabthebrisket Depends why you want to take it I suppose? No it’s not neccessary but often can give great insight to what goes on in the judging process and how it works. IMO I think that can be an advantage in competition.

@ArnieTex @Grabthebrisket I also wanted to ask and this goes to all competitive grillers, have taken the KCBS judging class as a guide to understanding what judges like to see in the clam boxes? I want to take the class but do I really need too?

@Onepunnydad @Grabthebrisket Make sure it’s completely thawed is #1 tip, brine brine brine, whether its dry or liquid, salt adds moisture and flavor plus aids to crisp up the skin

@Grabthebrisket @ArnieTex What’s Arnie’s favorite grill type to use for his foods? They always look delicious! Does he use one type at competitions or a variety?

@Onepunnydad @Grabthebrisket 1. Make sure it’s completely thawed
2. Brine brine , unless its a Butterball
3. Steady temps, 275-300 is my preference till done at 158-165 ish
4. Keep the smoke light. 😎
5. Carrots, onions, celery and garlic in the cavity.
6. Depending on your cooker rotate for even cooking.

Five hours on the Ugly Drum Smokers, Texas, that cooker just does everything right.
