Classic Kalamata & Feta Skewers 🍢🍢
"A taste of the Mediterranean, captured on a single string."
Yields: 10–12 skewers
Ingredients
The Base:
Feta Cheese: 7 oz (200g) block, cut into 1-inch cubes (use a firm Greek feta).
Kalamata Olives: 12 large, pitted.
English Cucumber: 1 large, sliced into thick half-moons or chunks.
The Herb Marinade:
Extra Virgin Olive Oil: 3 tbsp.
Fresh Lemon Juice: 1 tsp.
Dried Oregano: 1 tsp.
Fresh Dill: 1 tbsp, finely chopped (plus extra for garnish).
Red Pepper Flakes: A pinch (optional, for a hint of heat).
Black Pepper: To taste.
Instructions
Prepare the Marinade:
In a small bowl, whisk together the olive oil, lemon juice, dried oregano, chopped dill, and black pepper.
Marinate the Feta:
Gently toss the feta cubes in the herb mixture. Let them sit for at least 5–10 minutes; this allows the oil and herbs to penetrate the cheese and prevents it from drying out.
Assemble the Skewers:
Slide a Kalamata olive onto a small wooden skewer or toothpick.
Add a feta cube.
Add a piece of cucumber.
Finish with another feta cube or an olive if desired.
The Finishing Touch:
Arrange the skewers on a wooden board. Drizzle any remaining herb oil from the bowl over the top and garnish with a few more sprigs of fresh dill or a light dusting of feta crumbles.
Pro Tips:
Keep it Cold: Feta can soften at room temperature, so keep these chilled until just before serving to maintain that satisfying "snap" of the cucumber. 😋
