@DedayoRoots @cayenehosts @HerbalistChief @pshegs Fair point. but high heat wipes out most of the live bacteria so it’s not really probiotic after cooking. What you’re getting is the byproducts of fermentation (postbiotics) which still have some gut benefits.

Great question Bamky, High heat kills most live bacteria that's true but iru's probiotic value isn't only in the live cultures. The fermentation process pre-digests the proteins, produces bioactive peptides, and leaves behind postbiotics; metabolites that continue to support gut health even after cooking. This is why fermented foods benefit you even when cooked. The bacteria did their work before it reached your pot.
