Carrots haven't always been a vitamin A powerhouse. Over 25 yrs ago, ARS scientists began a quest to breed carrots packed with beta-carotene—an orange pigment used by the body to create vitamin A. Thanks largely to ARS, today carrots provide 75% more beta-carotene. #CarrotDay
