Huge thankyou @parishousechef Phil Fanning for hosting 4 Young Chef’s @CastleNewnham sit at Chefs Table today. We learnt about umami flavours, filleting brill, the kitchen brigade, costing dishes, presentation techniques & had our fair share of the incredible winter tasting menu!

It’s been 1 week since we received 8KG of mussels from @HeroesFish & @OffshoreShell. Secondary pupils @CastleNewnham were treated to a taste of Moules-frites, cooked by our Y10 Hospitality & Catering pupils. A fab opportunity to learn about seafood sustainability & nutrition 🐟

CNS are 1 of 250 schools receiving a delivery of rope-grown mussels from Offshore Shellfish The GCSE H&C pupils will be preparing, cooking & eating the mussels for the national #FishHeroes programme In secondary, we will be serving ‘moules et frites’ to staff and pupils ⬇️🇫🇷

What a fab morning year 10 had with @jellyhead70 at MK college for a year 12 experience day @ThebrasserieMK . We learnt how to prepare salmon and plaice turning them into goujons and fishcakes! Thank you for teaching us and welcoming us to your department! @CastleNewnham

Year 9 had a very important assembly yesterday from @BedsFire about the dangers of swimming in open water & what to do in an emergency. Thank you so much to the team who came out and delivered such a brilliant and interactive assembly. @CastleNewnham

Our favourite lesson is over again for another year! Year 10 portion up a whole chicken, boil the carcass to make stock, bake the wings and drumsticks, freeze the breast and thighs and make seasoned rice with the stock- all in 2 hours! Great work everyone!
